You will not be able to play a 3.1 client on CotH until the server is updated to accept 3.1.
Varian just looks horrible. In my opinion, they should have just made him a normal human model instead of something so crappy looking. It's like an attempt to make him look bad ass, and just failed horribly. HORRIBLY. But it was cool to watch.
