One thing we have to remember that Blizzard doesn´t always leave explanations for lore misshaps, ret-cons, changes and additions, often it is up to us, the players, to try to make imagine some kind of sense to the whole situation.

The Levels act as symbols in this case. A Death Knight doesn't go through a baby stage, like other classes. A Death Knights baby stages are at the same level of a 'Trained' or 'Disciplined' class like a Hunter or Mage. Death Knights, right out of the box, are hardened killing machines. The Lich King wouldn't have it any other way.

That's what I was going for, I wasn't saying that a "level one" is weaker than an 80, what I was saying is that ICly, Deathknights start out with an advantage. Like Touch says here, I was saying is as a symbol of how a warrior starts out with training, compared to a DK.
